 A popular home cook has revealed how to make delicious green pasta that’s packed with hidden vegetables. 

Sydney foodie, Ayeh Manfre, known as Cooking With Ayeh, says the pasta dish is the ultimate healthy comfort food. 

To make the dish she first removed the skin and pips from two medium avocados and added them to a blender with two cups of fresh basil.

The dish comes packed full of green goodness as it contains many hidden vegetables and super foods

She then added two crushed garlic cloves, half of a juiced lemon, a quarter cup of nutritional yeast and a quarter cup of olive oil into the blender. 

Ayeh tipped two tablespoons of Melrose Essential Garden powder into the blender with a sprinkle of salt and pepper, then blended the green mixture well. 

She then poured 200 grams of her favourite pasta into a pot with boiling water and cooked it until al dente. 

Once the pasta was cooked she tipped it into a bowl then poured the creamy green sauce on top and mixed well to combine. 

To thicken the sauce and add extra creaminess to the bowl of comfort food she added a splash of pasta water and enjoyed. 

Her easy, vegan-friendly pasta dish took only 15 minutes to make and she says it is her new winter go-to.

How to make Ayeh’s green pasta: 

Ingredients: 

  • 200g Pasta
  • 2 Avocados
  • 1/4 cup Olive Oil
  • 2tbsp Melrose Essential Greens powder
  • 2 cups Fresh basil
  • 2 Garlic minced cloves 
  • 1/4 cup Nutritional yeast 
  • Salt and pepper to taste 

Method:

  3. Tip two tablespoons of Melrose Essential Garden powder into the blender with a sprinkle of salt and pepper, then blend the green mixture well.
  4. Pour 200 grams of pasta into a pot with boiling water and cooked it until al dente.
  5. Tip the cooked pasta into a bowl and pour the creamy green sauce on top then mixed well to combine.
  6.  Add a splash of pasta water to thicken the sauce and enjoy.

Ayeh posted the recipe video to TikTok where many left comments saying they can’t wait to make the pasta dish themselves.
