Island Cooking: Summer is coming, and so is summer food

My yard vegetation are a minimal driving, but have started developing and before long I will be picking… if the birds do not defeat me to it.

In the meantime, I am even now dependent on flavorful Campari tomatoes and ripe grape tomatoes, mainly because what is summer season weather conditions with out tomatoes?

This extensive-awaited warm weather conditions will allow for eating on the deck once again, and some dishes are correctly suited to the al fresco practical experience, especially salads. Served with crusty bread and superior cheese, they make fulfilling, light meals.

This previous weekend the star was a variation of the classic Salade Nicoise, a authentic favourite when I can get very good veggies.

  • 1 jar canned tuna
  • 4 or 5 yellow potatoes, steamed, slice into chunks

  • Handful of Picholine olives

  • Handful of canned chickpeas, drained

Of system, change elements and parts in accordance to your taste, and what is refreshing and offered. Assemble on a big platter that shouts abundance! Provide with vinaigrette.

  • Flour Tortillas (8 or 10 inches)
  • Thinly sliced modest tomatoes on the vine…or Roma, cherry or grape tomatoes
  • Thinly sliced sweet onion
  • Fresh new Basil chopped…if not out there dry Basil will do
  • Oregano Extra virgin olive oil
  • Grated Mozzarella cheese
  • Grated Parmesan cheese
  1. Address a baking sheet with aluminum foil with uninteresting facet up
  2. Grease aluminum foil with olive oil
  3. Heat tortillas in microwave or baking oven

    Location warm tortillas on baking sheet

  5. Address tortillas with thinly sliced tomatoes one particular layer thick
  6. Scatter onion on best of the tomato layer
  7. Scatter chopped clean or dry Basil over the tomatoes and onions
  8. Scatter grated mozzarella cheese to address the tomatoes and onions
  9. Scatter about two tablespoons of Parmesan cheese above the mozzarella cheese
  10. Lightly sprinkle Oregano leaves (fresh or dried) on top rated 11. Drizzle about a tablespoon of olive oil on top rated of cheese and oregano

We rarely have dessert, but I just lately built a decadent pie for my close friends, Hunter and Carter and I am informed it was absolutely mouth watering. If you like sweets, this is a great one for summertime outdoor meals.



  1. Utilizing a hand mixer, blend the product cheese and peanut butter till absolutely put together.
